The first dinner, Nowa: A Prelude in Six Movements, celebrated the art of expression – where each course moved like music and storytelling flowed from plate to plate.
The second dinner, Nowa: Mise en Place, focuses inward, honoring the rigor, repetition, and restraint that make true refinement possible.
The final dinner, Nowa: Memories Reimagined, will return home – not just in geography, but in spirit. Drawing on the ingredients, traditions, and stories of the Lehigh Valley, this chapter will explore memory as both a foundation and a point of departure. More information to come.
Nowa: Mise en Place
“Nowa: Mise en Place” is not a performance. It is a meditation on the quiet discipline that makes beauty possible. Inspired by Melete – the original muse of practice – this dinner honors the unseen work behind refinement: the repetitions, the rhythms, the restraint. Set within the storied halls of Vault 634, the evening unfolds with quiet confidence. Each course is a study in control, every movement a gesture of care. There is no excess. No noise. Only the structure that supports grace, and the preparation that gives rise to something unforgettable.
This dinner is the second in Nowa’s pre-opening trilogy. Where the first dinner sang, this one listens. Guests are invited into stillness, into pacing, into a room composed not just by architecture, but by intention. Here, wine is poured with care. Service moves with rhythm. And the final course is delivered by the hands that prepared it. Because at Nowa, mastery doesn’t arrive in a flourish – it arrives through quiet, deliberate attention.
